Most “Indian restaurants” serve the same fifteen dishes from a narrow slice of Mughlai and Punjabi cuisine. However, India has 28 states, hundreds of communities, and thousands of distinct dishes. Masala Code was built to give Indore a different place. Here, a Chettinad pepper chicken sits beside a Lucknowi galouti, and Bengali shorshe ilish meets Goan vindaloo all cooked with technique-first respect for the original. We source regional spices directly, train our team on each region’s methods, and refuse to flatten the country into one beige curry.
